This is a dedication made by Bruno Bovelacci when I worked as a commis at Gualtiero Marchesi’s Albereta in Erbusco. Bruno is a poet, as I call it, and a friend forever, with whom we share a great passion for cooking. Bruno is a very genuine guy. Together we shared different professional experiences. We were together, in Paris for example, for a consultancy project for a chain of new brasseries, focused on the concept of Italian and French cuisine.
We were Chef (Bruno) and Sous – Chef myself. We have always respected each other, as men and as colleagues, and over the years Bruno has become for me as a brother.
